New restaurant brewing in Chesterfield

Two first-time restaurateurs are offering Chester residents a new place to quench their thirst.

Karen Verdisco and husband Matt this spring will launch Brew, a pub that emphasizes local beer and wine. They leased a 1,400-square-foot space in the Chesterfield Meadows shopping center, at the intersection of Centralia and Iron Bridge roads, and started the build out last week.

“We’ve been tossing this idea around for years, and this felt like the right time to move forward with it,” Karen Verdisco said. “Now that there are so many new craft breweries

The new taproom will feature between 20 and 30 draft beers – with more available by the bottle – and about 40 wines. Verdisco said that they haven’t finalized any of the restaurant’s beer offerings but that they plan to begin talks with local breweries such as Hardywood Park, Legend and Devils Backbone soon.

“More than anything, we want to get these local craft beers on tap and educate people of their options,” Verdisco said.

Verdisco said Brew would fill a gap in the Chesterfield restaurant market. With the exception of Capital Ale House’s Midlothian location, she said there aren’t a lot of pub options south of Richmond. Midlothian is also home to Sedona Taphouse.

“We live in this area. When we wanted to go out, we couldn’t find a place like this nearby,” Verdisco said. “We would always end up driving into Richmond. I think it’s definitely something that’s needed in the community.”

Before Brew, Karen Verdisco worked at Apple REIT, and Matt Verdisco was in the commercial recycling industry. They are now focusing on the pub full time.

The Verdiscos self-financed the project. Karen Verdisco said they’ve invested about $70,000 and will cut down on costs by handling most of the renovation themselves.

I wished you would consider opening up a place like this in Powhatan County. Our wine/beer place closed up years ago.

Wine…beer…lots of great places in Chesterfield. It would be terrific if we could get a big hotel or conference center to hold meetings, events, dinners for large groups. So tired of running downtown or to the west end. What’s out here now is sub-par at best.

Yes, hiring a contractor would have cost more, but how much has been lost in rent, sales, and marketing momentum? Time is money. I’m as excited as anyone about this place opening but it’s been five months and I looked in the window last week and they still got a ways to go. Hopefully they got a few months rent from the landlord.
