A local baker is expanding by taking over the space where he first hatched his business.
Up All Night Bakery has inked a lease for 1221 Bellevue Ave. The space was, until last month, occupied by Early Bird Biscuit Co., which shuttered that location in favor of its outpost in the Fan.
The 900-square-foot Bellevue outpost is a second location for Up All Night, which will continue to operate out of its other spot at 5411 Lakeside Ave.
Up All Night owner Jonathan Highfield expects to have production operations up and running at the Bellevue space later in June, though it won’t be open to the public anytime soon. He said the plan is to add on-site retail and limited cafe seating in the coming months.
“All I ask is people to be patient. I’m excited about what’s coming down the line,” he said.
Highfield knows the space well as he launched Up All Night there in 2019, doing his baking during Early Bird’s off hours before moving to its own storefront on Lakeside.
“It’s like going back to my roots,” he said.
Upon Early Bird’s recent closure, Highfield took over the lease and bought equipment that was left in the space. Highfield said the business has outgrown its current location, and the need for more space motivated the additional bakery.
“I got lucky getting this space, to be honest. I found out when everyone else did,” Highfield said, referring to Early Bird’s exit from the location.
Croissants have come to be a staple for Up All Night, which also bakes and sells breads, cookies and scones. And while there will be a bakery in the Bellevue space again, Highfield said customers shouldn’t expect biscuits to be on the menu.
“If they want a real biscuit, go over to the Early Bird on Robinson,” he said, where Early Bird continues to operate in the Fan.
Tony Ronaldo of Pollard & Bagby handled the lease negotiations on the space. Nathan Hughes of Sperity Real Estate handled the sale of certain Early Bird assets in the space to Up All Night.
