A local charcuterie business has carved out a space for its first storefront and is already looking ahead to further expansion.
Bite by Bite & Co., which delivers charcuterie boards and homemade cheese dips nationwide, opened its first retail location at Suite 152A of Stony Point Fashion Park in June.
CEO and owner Teyoshe Smith launched the business as a side gig out of her home in Richmond in 2022 while working for Capital One. She started by selling charcuterie boxes on Facebook marketplace. The business eventually grew into a commercial kitchen in Glen Allen and Smith decided to pursue it full time after having to balance both running a small business and maintaining her corporate career.
Smith moved to Atlanta last year, where she opened a second commercial kitchen.
A retail storefront wasn’t always in the plan for Smith. She said the delivery business was thriving, and when she outgrew the Glen Allen commercial kitchen and looked for a larger site, she stumbled upon the Stony Point storefront and decided to give retail a try.
Smith said she was drawn to the mall’s central location and its continued efforts to add to its tenant mix.
“I know Stony Point is on the rise of trying to build that location up and get that mall thriving, so I thought it would just be a really good place for me to also just be a part of that growth,” Smith said.
The storefront offers menu items made to order as well as grab and go items.
Bite by Bite & Co. sells charcuterie platters ranging from small sizes for three people at $65 to extra large platters for 15 people for $215, as well as charcuterie boxes ranging from $20 to $215. Dessert platters and charcuterie cups are also available.
Another Bite by Bite specialty are their grazing boards, which range from 2.5 feet long for $285, which can serve 20 people, to 10-foot-long boards for $1,150, which can serve 125 people.
It also offers grazing tables, which lay the food directly on parchment paper.
Bite by Bite’s central operations team includes a workshop instructor, a director of operations and a delivery driver. It delivers charcuterie through DoorDash, Uber Eats and Grubhub and also contracts drivers through UniHop, a delivery service for small businesses.
Bite by Bite delivers grazing tables in Virginia and Georgia up to 100 miles from their respective locations. Smith said she and her team can set up six to seven of those in a day. Other menu items, not including the grazing tables, like charcuterie boards, charcuterie boxes, cheese balls and cheese dips are delivered nationwide.
In addition to delivery services, the company sells its own cheese dips, with flavors like garlic feta, and cheese balls in flavors including bacon horseradish and pistachio goat cheese.
While charcuterie boards usually have a spot at the table at parties and events, Smith said she saw an opportunity to pursue the trend with the idea of “normalizing charcuterie” so customers can enjoy on any night instead of just special occasions.
She said she also built her business off establishing vendor contracts with clients like doctor’s offices and pharmaceutical salespeople, which typically do not have other charcuterie vendors.
“We’ve been tapping into businesses versus just working with consumers. And that’s where the real money has been,” Smith said.
Levied by her sales growth — making $379,000 in sales last year, more than triple the sales the previous year — Smith has her sights set on franchising her concept.
She has already put the Stony Point storefront up for sale to a potential franchisee. Divaris Real Estate Realtor Phuong Vo-Thornburg is the broker for the Stony Point location. And she aims to open locations in Florida, another in Virginia and in the Washington, D.C. area.
Smith is selling the franchises through franchising network site Wefranch. The website show’s Bite by Bite has received 79 franchise applications.
The franchise fee is $35,000 and franchisees will have the option to choose between retail or delivery.
Along with her franchising goals, Smith said she hopes to sell her cheese dips and cheese balls in stores like Sam’s Club and Publix. She aims to close out the year at $500,000 in sales.
