A pair of longtime Fan restaurateurs has cooked up a deal in the West End.

Johnny Giavos and Manny Mendez have purchased Flinn’s Restaurant at 403 N. Ridge Road in the Tuckahoe Shopping Center from owner Tammy Flinn Farley. They plan to convert the space into the second location of Kuba Kuba, a Park Avenue Cuban and Caribbean restaurant Mendez and Giavos opened about 16 years ago.

Farley opened Flinn’s in 2010 in the 2,800-square-foot space, and she said it will remain open until Dec. 20. Farley would not say how much the business and its furnishings sold for. Giavos and Mendez did not buy the Flinn’s property but will take over the lease on the space.

“I just basically wanted a change,” Farley said.

The deal, which closed earlier this month, adds to the list of restaurant holdings that Giavos and Mendez have compiled over the years. Giavos owns Sidewalk Café, Kitchen 64, Stella’s and Continental Westhampton. Mendez also owns C&N Galley in Forest Hill.

“You can’t stay the same,” Mendez said. “You have to grow a little bit year by year.”

They’ll look to open the new Kuba Kuba in March.

Mendez said the menu in the West End will be similar to the one found at the Fan location, but he will be able to expand it with Flinn’s bigger kitchen.

Mendez said he and Giavos plan to eventually bring on longtime Kuba Kuba employee Hugo Jordan as an owner in the new venture.

“He’s been an integral part of my success,” Mendez said. “He threw me a bone, and now we’re going to share something.”

The purchase of Flinn’s was first reported by Style Weekly.
