The Austin-based Tex-Mex chain’s new West Broad Village location was packed at lunchtime Tuesday, the day of its grand opening.
The colorful restaurant advertises its “Big As Yo’ Face” burrito and Elvis shrine, both of which can be found at each of Chuy’s more than 40 locations across the South and Midwest.
Michael Hatcher, Chuy’s head of real estate development, said in the fall that each location costs about $2.5 million to get up and running.
West Broad Village last year sold out of out-parcels, inking deals with Diamonds Direct, Carrabba’s and Chuy’s before owner Unicorp sold to California-based Excel Trust Co.
