Family’s restaurant chain expands to Ashland

A local restaurant chain is heating up Bass Pro country.

Mexico Restaurant opened Jan. 1 at 11670 Lakeridge Parkway, near the Bass Pro Shops-anchored Winding Brook development. The restaurant has taken over a 3,000-square foot space that was formerly part of a bigger space used by Salsas Mexican Grill.

The Ashland location is Mexico Restaurant’s seventh in the Richmond market. Run by the Garcia family, which opened its first Mexico Restaurant in 1990, its other locations are in Mechanicsville, Innsbrook, Forest Hill, Woodlake, Short Pump and Sandston.

CEO Maria Garcia said expanding to Ashland was in part a way of celebrating her family’s 25th year in business, while tapping into the rise in development in the surrounding area.

“It had been a while since we had opened a location,” Garcia said. “With the Outlets (at Richmond) coming to the area, we saw it as a great opportunity to continue the family business.”

The Outlets at Richmond is a long-planned 350,000-square-foot mall slated for the Northlake business park along Lakeridge Parkway and Lewistown Road. Businesses already open near the new Mexico Restaurant include a Subway, Layne’s Country Store, Beef Jerky Outlet and Cigar Realm.

Further expansion of Winding Brook is also in the works.

Garcia said it cost more than $200,000 to open the new restaurant Ashland. The effort was financed internally. Gauman Commercial Construction did the work on the space, and Perretz & Young was the architect.
