Chicken Fiesta is on the move again.
The popular, locally based chain known for its rotisserie chicken and Tex-Mex menu is opening a new location in Colonial Heights.
Shana Greenbaum, Chicken Fiesta general manager, confirmed the company is planning to set up shop in 3,000 square feet of space at 458 Charles H. Dimmock Parkway. It will be the brand’s fourth location when it opens as planned early next year.
Founded on the Southside nearly 10 years ago by Harold Vega, Chicken Fiesta operates locations in western Henrico and in the city along West Broad Street, as well as its flagship location along Midlothian Turnpike.
Greenbaum said Chicken Fiesta began exploring locations around Colonial Heights last year after noticing a spike in catering requests in communities south of Richmond and questions from customers hungry for more locations farther south in the region.
“We had people coming to our restaurant in Richmond that lived south of the city, coming in and asking when we were going to bring a restaurant to the area,” Greenbaum said. “Even when we were riding around in the Chicken Fiesta van scoping out spots, people would come up and ask if we were about to open a restaurant in the area.”
Chicken Fiesta will join a confluence of retail and restaurants in an area buffered by Southpark Mall and Southgate Square and Dimmrock Square shopping centers – all large-scale retail centers filled with national, regional and local retailers and restaurants.
Plans call for the Colonial Heights location, which is currently subdivided into two retail spaces, to be converted into one large space, Greenbaum said. Signature to its locations, the spot will include a rotisserie chicken grill in the front.
Brian Bock, a broker with Taylor Long Properties, represented Chicken Fiesta in its lease. Nicholas Walker, a broker with Colonial Heights-based Roslyn Farm Corp., represented the landlord.
Looking ahead, Chicken Fiesta is eyeing a fifth location in 2017 – and it could be another location south of the metro, Greenbaum said.
“We’re always looking for the right space that’s going to be a fit for our restaurant,” Greenbaum said.

Great to see local businesses expand organically…could franchising be in the future for Chicken Fiesta?
This is by far my favorite fast restaurant in the Richmond area, I just had lunch there yesterday. The chicken is amazing and the fried yucca addicting. I wish these folks nothing but the best going forward! If you haven’t been yet, just go already. Soooooo good.
